Barbados’ Mango Bay Hotel Group Opens Chic Waterside Restaurant

The Mango Bay Hotel Group, Barbados, is proud to announce the addition of Waterside Restaurant to its portfolio of renowned hotels and restaurants. Ideally situated in the vibrant St. Lawrence Gap, surrounded by picturesque views on the edge of the Caribbean Sea, Waterside Restaurant entices diners with a unique culinary experience and atmosphere.  

Celebrated and multi-award winning Chef Patron, Michael Hinds, and his dedicated team give Waterside the high quality and appealing variety of local delicacies carefully prepared with elegantly simple ingredients.

"We are thrilled to add Waterside Restaurant and the gastronomic works of Chef Parton to our Mango Bay collection," said Peter Odle, Chairman of the Mango Bay Hotel Group. "With starters such as crispy duck and orange salad with micro greens to main dishes like fire roasted tiger Prawns on bamboo with papaya relish, our customers are sure to have a dining experience that will leave them satisfied."

Other chic dishes offered at Waterside Restaurant included: Pan Roasted Black Angus ‘Tomahawk’ Steak with Truffled Mushroom Ragout, Molasses Glazed Rack of New Zealand Lamb with Mint Cous Cous, Tandoori Styled Local Rock Lobster with Green and Cut Fries, as well as elegant twists on local dishes like West Indian Styled Mild Chicken Curry with Coriander and Homemade Chutney.

"I’m honored to be able to work at restaurant such as Waterside," said Chef Parton.  "I have perfected the menu to infuse the amazing local flavors of Barbados with the culinary techniques and ingredients from around the world."

Chef Patron, explains, "We not only take our savory dishes to heart, our deserts are highly favored and artfully prepared.  Signature dishes include our spiced banana spring rolls with coconut ice cream and brand caramel coulis, warm bread and butter pudding with poached bing cherries topped with Tahitian vanilla bean ice cream, and for chocolate lovers our white chocolate mousse wrapped in dark chocolate and glazed barriers is sure to please any palette."

Waterside restaurant is open for dinner Tuesdays - Sundays from 6 pm and lunch and brunch on Sundays during winter season.
